English Thyme
Perennial. Broad, dark green leaves. Robust growth. Used in stews and soups. Great seasoning for rich meats and fish. Improves digestion, essential for bouquet garnish. Grow in full sun.

Woolly Thyme
Perennial. Low growing, woolly leaves with pale pink flowers. Has no scent or flavour, but is eyecatching when planted among other herbs. Loves full sun.

Coconut Thyme
Perennial. Pleasant scent. Attractive creeper. Small, dark green leaves.

Lemon Thyme
Hardy Perennial. Approximately 12 inches (30 centimetres) in height, with a spread of 8 inches (20 centimetres). Evergreen. Pink flowers in summer, fairly large green leaves with a strong lemon scent. Excellent culinary thyme, combines well with chicken, fish and jelly.

Golden Lemon Thyme
Scattered yellow edges on green leaves. Combines well with chicken, fish and jelly. Also great in vegetarian dishes because of its distinctive lemon flavour. Full sun.

Minus Thyme
Hardy Perennial. Creeper. Pink flowers in summer. Tiny, compact leaves. Decorative and aromatic, they provide excellent ground cover. Because leaves grow so close together it is ideal for growing between paving and alongside paths.

Pansy
Perennial. Edible flowers with winter-green overtones. Used in soups, fruit and potato salads, as well as ravioli, desserts and garnish.

Curled Parsley
Biennial. Finely cut, tightly curled leaves with a strong aroma and flavour. Prized as the most flavourful of all Parsley. Contains more Vitamin C then an orange; vitamin A, several B vitamins, calcium and iron. Diuretic and aids digestion. Use fresh or dried as a compliment to almost any dish. Full sun.

Hamburg Parsley
Petroselinum Crispum Tuberosum. Biennial. Both leaves and parsnip-like root are used for flavouring soups and stews, or steamed to serve with butter or sauce.

Italian Parsley
Biennial. Small, creamy white flowers in flat umbrels in summer. Flat, dark green leaves with a strong flavour. Recommended for culinary use. Needs moisture and prefers a little shade. Cut back any yellow leaves to encourage new growth. Remove flower heads at the first sign of them. Water well during hot weather. Ideal for containers, not recommended for strawberry pots. Used in soups, stews with meat, fish, vegetables, sauces and stuffing. Rich in vitamins A, B and C, as well as iron and calcium.

Plain Parsley
Biennial. Slightly earlier maturing then Italian Parsley, with an extra rich flavour. Wonderful addition to soups and stews. Full to partial sun.

Chili Pepper (Cayenne)
Annual. Red hot peppers with a zesty flavour that enhances soups, sauces, meats and egg dishes. Helps digestion as well as being an anti-flatulent. Ground pods and a little soap and water is a good insect reppelent for the garden.

Winter Savory
Perennial. Small white-pink flowers in summer. Leaves are dark green, linear and very aromatic. Attractive low bushes for borders and edgings. Plant in full sun and poor, well-drained soil. Trim occasionally to maintain shape and promote new growth. Combines well with vegetables and rich meats. Stimulates the appetite and aids digestion. Flavour is hot and peppery; add sparingly in salads. It can be used in oil and vinegar.

Summer Savory
Annual. Also known as bean herb. Small white-mauve flowers in summer. Aromatic leaves, oblong, pointed and green. Widely used in bean dishes as it helps to prevent flatulence. Excellent in chilled vegetable juices and meatloafs. Plant in full sun, poor, well drained soil. Plant in the garden in warm, sheltered spot and keep picking the leaves to stop it getting leggy.

Garden Sage Extrakta
Salvia Officinalis 'Extracta.' Perennial. Improved stain, containing a higher percentage of essential oil. Used in stuffing and sausage.

Hummingbird Sage
Salvia Guaranitica 'Black and Blue.' Tender Perennial. Brilliant blue flowers attract hummingbirds. Flowers from early summer until frost.

Tricolour Sage
Attractive blue flowers in summer. Leaves are green with pink, white and purple variation with texture. Leaves are small, thin and highly aromatic. Mild flavour that can be used in cooking. Can only be grown from cuttings. Plant in well-drained, non-acidic soil that is warm and dry. Never prune in autumn. Winter mulch. Best used fresh.

Purple Sage
Mauve-blue flowers in summer. Leaves are purple with a textured, long, thing and oval shape; also very aromatic. Clipped in spring, will develop new leaves but flowers a small amount. If not clipped plant will flower but go woody. Plant in well drained non-acidic soil that is warm and dry. Never prune in autumn. Winter mulch. Used in stuffing, sausages, omelettes, soups and stews.

Pineapple Sage
Tender Perennial. Striking red flowers, early fall. Leaves green with a slight red tinge to the edges that have a glorious pineapple scent. Plant in well-drained, non-acidic soil in a sunny location. Attracts hummingbirds. Use for drinks, chicken, cheese and in jams and jellies.

Golden Sage
Perennial. Rarely flowers in cool climates. Flowers are blue/mauve. Leaves are green/gold variegated with a texture, small, oval and aromatic. Plant in well-drained, non-acidic soil that is warm and dry. Mild flavour but good to cook with.

Fruit Sage
Tender Perennial. Strong aroma of mixed fruits makes an excellent addition to potpourri. Can be used to make jelly and teas. Shocking pink flowers attrack hummingbirds. Pinch to keep bushy. Full sun.

Russian Sage
Perennial. Not a true sage, but a versatile ornamental with purple blue flowers. Leaves have a strong camphor scent. Good in potpourri. Full sun.

White Sage
Salvia Apiana. Tender Perennial. Wide range of medicinal properties, used as an antiseptic for skin inflammations, sore throat and colds. Used for shampooo and hair rinse. Can be brewed for tea.

French Tarragon
Perennial. Dark green, shiny leaves. Grows to 36 inches (90 centimetres). Requires light, well-drained soil in a sunny location. Dislikes humid conditions. Plant should be renewed every 3 years as the flavour deterioriates as the plant matures. Keep watering to a minimum. Grows well in containers, but hates having wet roots. Excellent culinary herb, since the flavour promotes appetite. Distinctive flavour, suggestive of anise or licorice. Compliments chicken, veal, fish, stuffed potatoes, rice dishes and salad dressings. Wonderful in oil and vinegar.

Sorrel
Perennial. Large, succulent leaves most famous for sorrel soup. Rich in Vitamin C, it is also a kidney stimulant and blood cleanser. Full sun.

Stevia
Tender Perennial. Remarkable herbal sugar substitute. Contains stevioside, which is hundreds of times sweeter then sugar, but without the calories. Leaf powder can be used in place of sugar in drinks, baked goods, desserts, preservatives, etc. Pleasant flavour that does not overwhelm. Full to part sun.

Tansy
Perennial. Yellow flowers in late summer. Aromatic leaf deeply indented, toothed and dark green. Tansy needs to be positioned with care as roots spread widely. Tolerates most conditions, provided soil is not completely wet. Because of wide-ranging habit, container growing is not recommended. Rub into the coat of your dog or cat to prevent fleas. Hang leaves outdoors to deter flies. Add to insect repellent sachets. Sprinkle chopped.

Tea Tree
Perennial. Easily-grown in containers. The oil has been proven to be anti-bacterial, anti-fungal and anti-viral. Used for skin infections, burns, bruises, cuts, herpes, warts and many other conditions requiring a powerful antiseptic. Can be put directly on sensitive tissue without any irritation.

Red Valerian
Perennial. Tender leaves can be eaten in salads or cooked as greens. Roots are used in soup. Has fragrant red flowers. Full to part sun.

Sweet Violet
Viola Odorata. Tender Perennial. Dark violet flowers can be candied as decorations for puddings, cakes and ice cream. Edible flowers make an interesting addition to salads. Full to part sun.

Watercress
Perennial. Grow in very moist soil for best results. Wonderful addition to salads, soups and sandwiches. Fresh, peppery flavour.

Sweet Woodruff
Hardy Perennial. Height is about 6 inches, but spreads to 12 inches or more. White star-shaped flowers from spring to early summer. Green leaves are neat, and grow in a complete circle. Plant 4 inches apart. Ideal for difficult places, or in bordered, shady areas. Underground runners spread rapidly. Prefers rich, alkaline soil with moisture during the spring. Aroma is like a newly mown lawn, and usually is present wihen its dried. Dry flowers and leaves together in early summer. Warning: Internal use not recommended.

Wormwood
Artemesia Absinthium. Perennial. Used as a moth repellant and a tea/spray to repel slugs and snails. Use with caution on small plants or seedlings.
